Yum! I just had one of the last slices of this amazing dessert. So delicious and easy to make so get your pens and pads and write this recipe down now!
What you need:
•Ceramic/Glass Dish - preferably rectangular in shape
•350g Mascarpone cheese
•360ml double cream
•3tbsp caster sugar
•75ml coffee flavoured liqueur
•120ml cold espresso coffee
•grated dark chocolate
1.) Mix the coffee and liqueur together in a bowl and set aside.
2.) Put the mascarpone cheese and sugar in a bowl and mix together until sugar is dissolved.
3.) Whip the cream in another bowl until it holds its shape.
4.) Fold the cream in with the mascarpone.
5.) Spoon a couple spoonfuls of the mixture in the dish and spread out evenly to form the base layer.
6.) Dip a sponge finger into the coffee and liqueur mixture until just soaked and place on top of the cream. Repeat until the whole layer is filled with sponge fingers.
7.) Repeat steps 5 & 6, finally topping off with a layer of the mascarpone.
8.) Smooth the surface, put a cling film over it and chill in the fridge for 4 hours.
9.) When finally chilled, dust the surface over with cocoa powder and grated dark chocolate.
